Vinification and maturation
Alcoholic fermentation was carried out keeping constant control of temperature between 25 to 27°C, which allowed to extract a lot of fruit flavors of each variety. Once the malolactic fermentation was done, 15% of the wine was raised by 50% French oak and 50% American oak for a period of 6 months.
Ruby red with purple colour. Sweet notes of red fruit such as raspberries and cassis accompanied by soft spicy notes of black pepper and tabacco. Soft notes of vanilla and chocolate contributed by French and American oaks. Good balance and medium body, it is fresh, with balanced acidity and tannins and friendly. A red fruit and chocolate palate adding complexity and elegance.
Delicious with mature cheeses such as Emmenthal or Brie and grilled meats.
