Hand harvesting in plastic bins. Bunch selection. Destemming and crushing. Berry selection. Fermentation and maceration in stainless steel tanks during 19 days at 23-25°C. Natural malolactic fermentation. 20 months aged in new French oak barrels. Filtering. Bottling.
Unanime has an intense cherry-red colour, elegant aromas of chocolate and tobacco, along with a touch of black pepper and some ashy notes. Well structured, with round tannins that blend nicely with its fresh,juicy acidity.
