Vinification and maturation St-Raphaël’s basic ingredient is the mysterious mistela, which derives from the mutage of the grape juice with alcohol to stop fermentation and preserve the original grapes’ natural sugars. Then, the cinchona and bitter orange bark, vanilla and cocoa slowly macerate in alcohol until the flavours are completely absorbed. During assemblage, the talent of the Cellar Master calls on a centuries-old tradition to give St-Raphaël a perfect balance. Next, the final steps are then carried out: refrigeration, filtration and bottling.
