Vinification and maturation
In temperature controlled, wooden vinification tanks, with a 14-20 days maceration. A part in new 5.5 hl tonneaux of French oak for 12 months. The whole assemblage in concrete tanks for 12 months. Finally 6 months in bottle.
Color : Intense ruby red. - Nose : Intense, vinous and harmonious bouquet enriched by the aging in tonneaux. Taste : Dry, full and slightly tannic.
Red meats, wild especially roasts, wild games and tasty dishes.
