Vinification and maturation Grapes were hand-picked and transferred to concrete tanks whole bunch. The bunches were then foot stomped and left for natural fermentation to commence. During the ferment 2 pumpovers were given per day till the fermentation was complete, 2 weeks of post maceration then pressed. The wine spent 16 months in a combination of foudre and concrete eggs. The final blend consists of 65% foudre and 35% concrete.

Features The wine has a deep but bright colour. The nose is very floral with violets and dried herbs, spice and savoury notes. The palate is very tight with fine grained tannin and of medium body. The wine was made to age so should show best after 2-3 years and further cellaring would be recommended.
