Vinification and maturation The wine is made from the traditional Bourguignon style with a sorting, a de-stemming and punching. The wine is fermenting without any yeast thanks to those present on the skins. It is matured in barrels after what it is simply clarified on silica soil.(Je ne suis pas certaine du sens de la phrase et de sa traduction). It contains very low levels of sulphites.
-
Features Dark garnet color. On the palate, this wine is crisp closing with notes of kirsch. It is quite suitable for ageing.
-
Food Pairings Ideal with meat and gravy, wild boar or any other small wild game.
