The traditional grape varieties (Pinot Noir & Chardonnay) are hand harvested during the cool of the night and early in the morning at the beginning of the grape harvest season.
Krone Borealis is fermented in the bottle and then aged on the lees in the underground cellars, after which, before disgorging the wine, the bottles are placed in wooden desks and the bottles are rotated entirely by hand.
The nose is elegant and biscuity. This wine offers a nice creaminess in the mouth. The bubbles are fine and persistent.
Ideal as an aperitif, with oysters, grilled langoustines in butter or a fillet of white fish such as tilapia.
