  • Terroir
This cabernet-sauvignon comes from block # 38 of La Trinidad vineyard, located in the coastal valley of Maipo, with a clay-granitic soil, south facing.
  • Vinification and maturation
The bunches are carefully hulled, selected and pressed. They are then placed in stainless steel tanks for cold maceration. This pre-fermentation maceration is performed at low temperature between 8 and 10 °C for 5 days to get a rich color and all the expression of the fruit. The must was then fermented in stainless steel tanks. Once the fermentation is complete, a post-fermentation maceration is carried out, allowing a higher concentration and structure of the wine. The wine aged in French oak barrels for 18 months, of which 33% is new, then eight more in bottle.
  • Features
On the nose, this wine expresses aromas of blackcurrant jam, raspberry and cranberry, characteristic of the Maipo Valley. It has touches of vanilla, cinnamon and pink pepper. It is slightly smoked because of aging in oak barrels. On the palate, it is perfectly balanced, generous, and its tannins are light. Its finish is long and chocolatey.
  • Food Pairings
Ideal with grilled meats, spicy dishes and cow's milk cheeses, type emmental, brie.
  • Other information
Cellaring potential: 10 years. It is advisable to put it in the carafe 30 minutes before the service. Ph: 3.57 - Acidity: 5.99 g / L (tartaric acid) - Residual sugar: 3 g / L
