Vinification

- Vinification: alcoholic fermentation in stainless-steel vats followed by malolactic fermentation. (6 months minimum) - Bottling and « prise de mousse » (6 to 8 weeks) - Maturation in cellar: 30 months minimum - Riddling and disgorging (4 to 5 weeks) - Extra ageing in cellar after dosage: 3 months minimum - Dosage: 9 g/l - BRUT Liquor of old wines aged in large oak casks.

Features

The source of several crus from the Côte des Bar, Côte des Blancs and Vitry allows our winemaker to create a Champagne with delicacy and complexity. Gold yellow colour. Floral perfumes with hints of stone fruits such as peach and apricot on the nose. Fine, intense and complex palate with touch of yellow plum on the finish. Keys aromas: riped fruits, white peach, yellow plum.

Food Pairings

Ideal with escalope with cream, sweetbreads, a fricassee of ceps, or goat cheese terrine.
