Terroir

Origin: pinot noir from the Côte des Bar.

Vinification

- Vinification: alcoholic fermentation in stainless-steel vats followed by malolactic fermentation.- Bottling and « prise de mousse » (6 to 8 weeks) - Maturation in cellar: 24 months minimum- Riddling and disgorging: (4 to 5 weeks)- Extra ageing in cellar after dosage: 3 months minimum- Dosage: 9 g/l - BRUTLiquor of old wines aged in large oak casks.

Features

Intense yellow colour. Intense and complex nose. Dried fruits with aniseed and mentholed nuances. Elegant and soft in the mouth, while remaining fresh with a good finish. Key aromas: plum, roasted apple, tobacco.

Food Pairings

Ideal with a blanquette of veal, chicken with champagne sauce, chicken with confit lemon, foie gras with toast and saffron risotto.
