Terroir

Treed or bushy vines (depending on the provenance, center or east of Sicily) are located between 50 and 350 meters above sea level. The climate is insular, with mild winters and hot, dry summers.

Vinification

The grapes are harvested at full maturity, between the second and first week of October. Traditional fermentation with grape skins for six to eight days. After racking, the grapes are gently pressed before the malolactic fermentation. At least 10 months aging in large oak barrels and then in cement tanks. Finally, aging in bottle for a minimum of two months, always at controlled temperature.

Features

Wine of rather deep ruby color. Nose from which emanates fragrances of sweet spices, candied cherry and plum. This dry red has good vivacity and is provided with fleshy tannins. The mouth, of ample texture, ends in a rather persistent finish. Potential for custody of more than five years.

Food Pairings

Excellent with grilled or roasted meat and medium bodied cheeses.
