Vinification and maturation The harvest is the culmination of the work of the winemaker. The three grape varieties that make up Cap de Merle are harvested and vinified separately. The vinification, about three weeks, is adapted according to the vintage in order to develop generous and fruity wines. It is carried out with strict temperature control. The wine is stored (until bottled) in stainless steel tanks or cement for 15 to 18 months.
