  • Terroir
    Drip irrigation with water arising from the Andes melting glaciers.

    Vertical trellis.

    Cabernet sauvignon: Pedernal Valley: 1350 MASL. Coarse soil with very low water holding capacity. Mild climate, and a 20 °C. Temperature range.

    Syrah: Tulum Valley: 650 MASL. Sandy loam soil and bedrock, with very low levels of organic matter. Warm and dry climate with low temperature range.
  • Vinification and maturation
    Manual harvesting and destemming.

    Fermentation with selected yeasts.

    Overpump and maceration for over 25 days.

    Pneumatic pressing.

    Natural malolatic fermentation.

    Auto-clarifying racking.

    Ageing of the wine in French and American oak for 12 months.

    Blending and filtration before bottling.

    Dark burgundy colored wine with well integrated oak and balanced fruit and tannins. Soft and rich with a subtly rounded mouthfeel.
  • Food Pairings
    An excellent partner to spicy red meats and ripe cheese. Can also be savored on its own.
