Terroir Drip irrigation with water arising from the Andes melting glaciers.
Vertical trellis.
Cabernet sauvignon: Pedernal Valley: 1350 MASL. Coarse soil with very low water holding capacity. Mild climate, and a 20 °C. Temperature range.
Syrah: Tulum Valley: 650 MASL. Sandy loam soil and bedrock, with very low levels of organic matter. Warm and dry climate with low temperature range. -
Vinification and maturation Manual harvesting and destemming.
Fermentation with selected yeasts.
Overpump and maceration for over 25 days.
Pneumatic pressing.
Natural malolatic fermentation.
Auto-clarifying racking.
Ageing of the wine in French and American oak for 12 months.
Blending and filtration before bottling. -
Features Dark burgundy colored wine with well integrated oak and balanced fruit and tannins. Soft and rich with a subtly rounded mouthfeel.
