    Soil: Limestone; Average age of the vines: 50% of this plot is 15 years old, the other half is about 45/50 years old; Management of the vines: Tilling the soil. Total elimination of chemical weed killers. Limited use of chemicals in pest control. Limiting yields and reducing the risk of rotting by disbudding, thinning out leaves on the side facing the morning sun and removing lateral shoots...
  • Vinification and maturation
    Manual harvesting, grapes are sorted on the vine and then on the truck equipped with a sorting table. This wine is from two vineyards planted almost side by side: 50% of the plot is planted with 45 to 50-year-old vines, and 50% was planted in 2000. Both wines are vinified and aged separately and then blended for bottling. . After 5 days of natural extraction by maintaining a constant temperature of 12°c, the work is mainly confined to punching down the cap and controlling temperature during the alcoholic fermentation. Aging takes place in casks for 12 months (15% new casks) followed by 3 months in vats. This wine was not filtered; light sediment may form in the shoulder of the bottle.
