Vinification and maturation
Very pure and fine aromatics of strawberries, raspberries, red cherries and spice. Delicate, mineral and fresh on the palate.
Grapes were de-stemmed and sorted. The juice was chilled and allowed to softly ferment over three weeks. Stored on its lees neutral french oak barrels for 9 months until bottling.
